Westcombe Cheddar At Westcombe they make 18-20 cheeses a day, 5 days a week, with family friendly sociable hours. The big rounds will be matured for up to 18 months, tested from time to time by plunging a cheese iron into their centres, and checked for flavour and acidity. You never quite know when a cheese will be ready – it just takes as long as it takes.
Somerset Camembert is rich and creamy with a soft edible white rind. As the cheese matures the curd softens, becoming a uniform butter or straw colour and developing a fuller flavour. As for Brie, we recommend serving Somerset Camembert during the week before the use by date to allow the cheese to mature.
Somerset Goats Cheese or Capricorn Goats Cheese has a delicate velvety soft white coat. When young it is mild and crumbly and has a slightly nutty flavour. As it ripens from the outside towards the centre, the white curd becomes softer and creamier, and develops a fuller flavour.
Windyridge Cheese specialise in producing hand made flavoured cheese, boasting a range of approximately thirty varieties. The cheddar used in our flavoured cheeses is selected from the West Country, which we then add our infusions of herbs or spices. Somerset Brie is creamy with a mild, fresh flavour and a soft edible white rind. The curd is the colour of straw, as it ripens from the outside in, it becomes softer, richer and with a fuller flavour. The cheese should be removed from the refrigerator at least an hour before serving. Accompany with a soft, fruity red wine and fresh crusty bread. For a simple way to round off a meal serve ripe Somerset Brie with fresh cherries or celery.
Hampers: Firstly A British Tradition
It wasn’t until the 19th Century when the hamper became an established British tradition, when it was the task of a noble lady to provide charity to the poor and needy living on her lands. This was usually a food hamper in the form of a wicker basket filled with seasonal fayre, which allowed air to circulate around the food to stay for fresh longer. Gifts of clothes were also used as padding to wrap fragile items. These may not have been gourmet hampers, but the tradition of giving hamper gifts had now been established.
During the later 1800's with the expansion of the railways it was possible for parcels, hampers and goods to be sent in a matter a just a few days to most parts of the UK. One prestigious London based department store during this period developed the concept for selling the food hamper as a gift that could be sent for Christmas to friends or family. This was at this time a preserve of the wealthy as the costs involved were considerable.
Over a hundered years on we find the concept of food hampers and gift baskets as a popular gift to send have spread through nearly every culture and country on a global scale.
